Mee Goreng Mamak (Malay-Indian Fried Noodles) Recipe Sahur Day 1


Ingredients:
  • 500g fresh yellow noodles
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, chopped
  • 1 small onion, chopped
  • 2 tablespoons tomato sauce
  • 2 tablespoons chili sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 2 tablespoons kecap manis (sweet soy sauce)
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 2 eggs, beaten
  • 100g beansprouts
  • 1/2 cup Chinese chives, chopped
  • 1/2 cup fried tofu, cut into small pieces
  • 1/4 cup fried shallots
  • 1 lime, cut into wedges

Instructions:
  • Boil the noodles in a pot of water for 2-3 minutes, then drain and rinse under cold water. Set aside.
  • Heat oil in a wok over medium-high heat.
  • Add the garlic and onion and stir-fry until fragrant.
  • Add the tomato sauce, chili sauce, soy sauce, oyster sauce, kecap manis, black pepper, and salt, and stir-fry for 1-2 minutes.
  • Push the sauce mixture to the side of the wok and pour the beaten eggs into the empty space.
  • Scramble the eggs until cooked, then mix with the sauce mixture.
  • Add the beansprouts, Chinese chives, fried tofu, and noodles, and stir-fry until well combined and heated through.
  • Top with fried shallots and serve with lime wedges.
