Ingredients:
- 500g fresh yellow noodles
- 2 tablespoons vegetable oil
- 2 cloves garlic, chopped
- 1 small onion, chopped
- 2 tablespoons tomato sauce
- 2 tablespoons chili sauce
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 2 tablespoons kecap manis (sweet soy sauce)
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon salt
- 2 eggs, beaten
- 100g beansprouts
- 1/2 cup Chinese chives, chopped
- 1/2 cup fried tofu, cut into small pieces
- 1/4 cup fried shallots
- 1 lime, cut into wedges
Instructions:
- Boil the noodles in a pot of water for 2-3 minutes, then drain and rinse under cold water. Set aside.
- Heat oil in a wok over medium-high heat.
- Add the garlic and onion and stir-fry until fragrant.
- Add the tomato sauce, chili sauce, soy sauce, oyster sauce, kecap manis, black pepper, and salt, and stir-fry for 1-2 minutes.
- Push the sauce mixture to the side of the wok and pour the beaten eggs into the empty space.
- Scramble the eggs until cooked, then mix with the sauce mixture.
- Add the beansprouts, Chinese chives, fried tofu, and noodles, and stir-fry until well combined and heated through.
- Top with fried shallots and serve with lime wedges.
