Almond London is a popular Malaysian dessert that's often served during festive seasons like Eid al-Fitr or Christmas. It consists of a crunchy biscuit coated with melted chocolate and a layer of roasted almond. Here's a simple recipe to make Almond London at home:
Ingredients:
200g roasted almonds, roughly chopped
200g Marie biscuits, crushed
200g dark chocolate, chopped
1/2 cup condensed milk
1/2 cup butter
Instructions:
In a mixing bowl, combine the chopped almonds and crushed biscuits. Mix well.
In a double boiler, melt the chopped chocolate over low heat. Add the condensed milk and butter, and stir until well combined.
Pour the melted chocolate mixture over the almond and biscuit mixture. Stir until everything is well coated.
Take a small amount of the mixture, about 1 tablespoon, and shape it into a ball. Repeat until all the mixture is used up.
Place the almond balls on a baking sheet lined with parchment paper. Chill in the fridge for at least 30 minutes or until firm.
Once the almond balls are firm, melt the remaining chocolate in a double boiler.
Using a fork, dip each almond ball into the melted chocolate and coat it well. Place it back on the parchment paper to set.
Once all the almond balls are coated with chocolate, chill them in the fridge for another 30 minutes or until the chocolate is set.
